Vietnamese crepes - Fried rice flour batter filled with anything in your fridge or pantry.
Wouldn't be terribly hard to make shawarma fries with vegan ingredients, like I'd get some veggie chicken or mushrooms and then add your spices. I dunno how handy you are in the kitchen but microwaving potatoes before you fry them shaves a lot of cook time off. Sometimes if I'm feeling lazy I microwave the potatoes then put them in a frying pan and mash them flat with a spatula. Chow mein or some kind of ramen are usually pretty easy to whip up if you know what you're doing.

I bet beer cheese and pretzels would be extremely easy to make vegan. The pretzels are already there; Just a matter of making beer cheese vegan, which shouldn't be difficult.
I've got an air fryer and make fries/chips a lit more than I should. Zaatar spiced thick potato chips with hummus rocks. Falafel is a big one for me as well. Burritos too.

Can you make fried rice vegan? When I used to drink I'd eat rice as it was easy and filling.
Sometimes I make a tofu and pepper fried rice. Very tasty, very filling
fried rice can be made without egg so yes, also while I haven't tried it I bet aquafaba if preped right could make for a perfect egg substitute in fried rice
fried rice is great even without egg or egg substitute. the korean restaurant i worked at never used egg. just sesame oil, onion, bell peppers, s&p. damn i miss that spot.
Not really one to one with egg but crumbled seasoned and fried medium firmness tofu is really good for that.
Especially if you have black salt.
Vegan kebabs, portobello mushroom burger, almost anything with TVP are all really good options. Also fried battered artichoke hearts are disgustingly good.

My dinner tonight honestly had this exact vibe... (sorry for the blurry pic)
Fried soya chunks, cashew mac, and potato salad
Simplified recipes:
Basically, for 1 cup dry chunks after you hydrate and squeeze, 1/2 tsp white pepper, garlic powder, onion powder, 1/4 tsp salt, paprika, MSG, a little bit of water or veggie broth (I even use the reserved water from squeezing out the chunks) coated with 3 cups of cornstarch and 3 tbsp of vegetable oil.
Fry it however you'd like, oven, pan, air fryer, or whatever to the degree of crispiness you'd like. I bake it in the oven for 25 minutes at 425 Fahrenheit or 218 Celsius. I flip after 15 minutes, and I use the broiler effect on the bottom rack when there are 3 minutes left (be careful with this one. It crisps up quick!)
Real simple. 2 medium russet potatoes. Boiled (I leave the skin on). Coated in a dressing consisting of 1/2 cup vegan mayo (my recipe here), 1/2 tbsp yellow mustard, 1/2 tbsp dill relish, 1 tbsp agave nectar (Makes it have a really nice sweet taste!), 1/4 tsp kala namak (AKA black salt), 1/4 tsp regular salt, 1/8 tsp black pepper, 1/8 tsp paprika (plus some sprinkled on top afterwards), 1/4 tsp onion powder, and 1/4 tsp celery seed.
Cut the potatoes, coat 'em in the sauce, leave 'em in the fridge for at least 2 hours.
Simple or not, that sounds tasty
I like to make bean and rice taco filling, then eat it out of a bowl with toasted tortilla chips. Nice thick ones for crumch, or those bowl shaped ones so you can stack it up with chilled salsa, or maybe just mix it up with smaller chips and eat it with a big spoon.

Potato chips. Edamame or nuts with salt are good choices but not especially greasy.
Depresso Mac and Cheese
Dump pasta into boiling water. While that's cooking get your cream analogue of choice and pour it in a 2nd pot. Throw vegan cheese in there and let it melt together and season for your taste. I like nutmeg, salt, and maybe a little paprika. I guess edible yeast flakes could also be good.
Frozen spring rolls in air fryer or a cooking pan with lots of oil
