Maybe this is not so "simple" (depending on how you define "simple"), but
My dinner tonight honestly had this exact vibe... (sorry for the blurry pic)
Fried soya chunks, cashew mac, and potato salad

Basically, for 1 cup dry chunks after you hydrate and squeeze, 1/2 tsp white pepper, garlic powder, onion powder, 1/4 tsp salt, paprika, MSG, a little bit of water or veggie broth (I even use the reserved water from squeezing out the chunks) coated with 3 cups of cornstarch and 3 tbsp of vegetable oil.
Fry it however you'd like, oven, pan, air fryer, or whatever to the degree of crispiness you'd like. I bake it in the oven for 25 minutes at 425 Fahrenheit or 218 Celsius. I flip after 15 minutes, and I use the broiler effect on the bottom rack when there are 3 minutes left (be careful with this one. It crisps up quick!)
Real simple. 2 medium russet potatoes. Boiled (I leave the skin on). Coated in a dressing consisting of 1/2 cup vegan mayo (my recipe here), 1/2 tbsp yellow mustard, 1/2 tbsp dill relish, 1 tbsp agave nectar (Makes it have a really nice sweet taste!), 1/4 tsp kala namak (AKA black salt), 1/4 tsp regular salt, 1/8 tsp black pepper, 1/8 tsp paprika (plus some sprinkled on top afterwards), 1/4 tsp onion powder, and 1/4 tsp celery seed.
Cut the potatoes, coat 'em in the sauce, leave 'em in the fridge for at least 2 hours.
Simple or not, that sounds tasty
