Wouldn't be terribly hard to make shawarma fries with vegan ingredients, like I'd get some veggie chicken or mushrooms and then add your spices. I dunno how handy you are in the kitchen but microwaving potatoes before you fry them shaves a lot of cook time off. Sometimes if I'm feeling lazy I microwave the potatoes then put them in a frying pan and mash them flat with a spatula. Chow mein or some kind of ramen are usually pretty easy to whip up if you know what you're doing.
I think you're right, and I could get vegan shawarma fries down with some experimentation
