For those who actually want to know why water left over night tastes bad, it's because there's dissolved gases in a fresh glass of water which contribute to the flavor. Letting it sit out lets it off-gas so it tastes stale.
This is similar to why coffee left out tastes stale. The aromatics off-gas changing the flavor.
Something about taste evolving to avoid stale water as it was breeding grounds for ucky yucky but I don't have a source
