We do this with our dog if she get ill. We know she's not drinking enough water so we but bits of cooked chicken in the bottom of her water bowl. She ends up drinking water accidentally while trying to eat the chicken.

We do ice cubes with our cats

I've tried this with my cats but the ice cube immediately gets shoved under the fridge where it melts.

oh, we had a cat who loved to do that, but they still really needed the help drinking. it was a tip from the vet. we don't do it with all of them and we don't do it all the time. honestly, that cat had the cat kidney/stress disease and anything to get them drinking more made us happy. she usually drank the ice but if we put too much in she played with it like yours. the rest of ours, we usually only did/do it in the summer or when they were nearing the end of their lives and we were trying to superhydrate them to extend their lives.

Are floating ice cubes interesting enough? Also, don't they get brain freeze?

1: yes. they like licking them. also i think cold water tastes better and i love my kitties, so why not give them cold waters in the summer?
2: i don't know i am not fluent in cat. ice cream gives me brain freeze but that ain't stop me from eating it
