We could image that some ingredients needed in the fabrication process of health potions are actually dangerous and would kill you, or at least not heal you.
Turns out that to brew a health potion, you first have to brew a deadly poison, and then pass it through the mirror dimension to flip its properties.

I think the assumption here is that even if you did get injured by some of the caustic precursors, sharp assembly mechanisms, or anything else like that, you would inevitability ALSO have some of the final product fall on you and heal you.
