Make sure to use the right os version for your processor architecture, windows for x64 and linux for risc-v.
The M3 is being emulated in Excel with the LAMDA function. Timing is provided by one of those drinking bird toys.
You can still run Win 3.11 in DOSBox in that Ubuntu instance. I did it once for fun (from a Mint VM), but couldn't get anywhere online.

I thought I heard Apple got rid of bootcamp, do you have to run everything as a virtual machine now, or can you just format a drive GPT and install what you want using some boot option?
Unless it's an m1 or m2 you can't run a linux kernel natively. Partial support for m3 now with m4 coming down the pipe.
