Your diet is simply what you eat. If you think of it as "going on a diet", that is, temporarily restricting what you eat for the purpose of losing fat, you'll eventually fail. The same way you'd fail if you decided to quit smoking or drinking "just until you feel better."

The better way is to permanently change your diet iteratively, until it works for you, and that is your new diet--just what you eat from then on. Just like you need to quit smoking or drinking permanently. Fortunately, most people aren't addicted to certain foods to the same level some get addicted to smoking, drinking, or other drugs.

Smoking, drinking, and other drugs have a clear shory term withdrawal process. Since eat regularly it hides the symptoms of food cravings for a massive number of people which is a large part of why we have an obesity epidemic.

I think this is a fine strategy for maintaining your weight. However, temporary periods of caloric restriction or surplus is a good strategy for losing or gaining weight. Going on a 500kcal deficit to lose a pound a week is pretty reasonable. Pretty easy to adjust from your maintenance diet by just eliminating a few snacks, cutting down carb portions, or switching some things to low fat versions.

I grew up in a European family, we never understood the TV shows that had people eating in the middle of the night. Not a thing in France, Italy, Spain, Germany. Maybe it is now. Night eating is literally the worse thing you can do for metabolism and brain health.
