I mean, a proper wheel is worth around a thousand bucks and stores very well, in fact, it might increase in value due to further aging.

Not only that, the Parmigiano Reggiano consortium has been exploring using financial instruments to valorize their wheels

High quality parmesan (and cheese in general) is worth a lot, google AI says high quality wheels aged for 2 years can cost $2500+, and some very well aged varieties can auction for tens of thousands of dollars

A wheel is a lot of cheese though, like 80Ib of cheese

Large cheese makers have endless warehouses full of the stuff, and it sells really easy and for very high prices.

Not different than saying "hey I have this bunch of gold, if I default on my loan you can have it"
