Mole is a traditional dish that's basically boiled fowl covered in somewhat spicy chocolate paste.
Most people now use chicken, but originally it should have been turkey. It tastes better with turkey. I guess at some point it might have used moscovy ducks, Wich are not ducks, since they are native to the region.
Most people make it too sweet, I prefer it with less of sugar, since I can't have too much sugar.
I have never tried it with fried chicken, but I might over the weekend.
