I also don't understand how "the physical button and built-in cameras, speakers, and microphones suggest that it can operate independently". It could just as well operate only with a connection to your phone. Otherwise it'd have to pack a lot more hardware.
E-sim and working everything in the cloud maybe? Knowing apple, they'll add a subscription and there, an "independent device":
