Can someone explain to me the pairing with seemingly random episodes? I'm not super familiar with the original series. Am I missing something?
Yeah, it’s anything but random. All the episodes chosen have elements and themes shared with the movie they’re paired with. In particular, Star Trek II is a sequel to Space Seed, the episode that introduces Khan.

Undiscovered Country was the first Trek film I saw in theatres. Very glad I had the chance. That ominous music over the opening credits had such an impact.

IMO they should've re-released all 13 of the movies, make a whole month of it.
I would pair UDC with “Errand of Mercy”. I’m 99% sure that’s the episode where the Klingons are introduced for the first time.
