I never saw Weissman's supposed glory days, but I did hear people talk about him and checked him out and found him insufferable.
I also dropped Babish, I just got tired of the slop content and the overall drop in quality.
I genuinely think cooking channels have a finite lifespan, because theres only so much you can cook before your audience basically has all the cooking knowledge they need to do everything.
Chef John from Foodwishes has basically kept the same style and Dad joke humour for ages and he is still pumping good stuff weekly
Chef John is purely videos of recipes. He never did 40 minute episodes about which salt is the best.
I used to not be able to deal with Chef John's voice inflections, but after enough times, I started to find it soothing. Great, straightforward, no nonsense videos. I haven't tuned into him for a bit, not for any particular reason, but he is a classic.
He was BAD early on with it, he's calmed it down a LOT. That said, the man has never released a recipe on there that wasn't an absolute BANGER. Everytime he checks all the right boxes for the fam, I cook it and get rave reviews.
His delivery is definitely an acquired taste. And as ALwayyyys.... ENjoyyyyy.
Chef John was there when YouTube began.
He will be there when Google pulls the plug.
100 percent. There's too much potential food for a food channel to ever run dry of content. Only personalities and gimmicks run their course.
He's slowed to the point of years passing between videos (last one was 2 years ago now), but Jacques Pepin is still making new ones (I hope) 😔
Even professional chefs learn new recipes on a fairly frequent basis. You can't run out of content on a cooking channel.
while there may be near infinite variety in the recipes themselves, theres only so many times you can sit down and watch someone make a soup, or a roast, or a casserole, or what have you, regardless if they have 30,000 different recipes for each.
