Joshua Weissman, he used to have some good cooking content but it got too brain rotted for me.
Similarly I almost dropped Binging with Babish, but he started a new channel for his non-BWB content and actually put up a classic-style video recently!
I left Weissman on sub, but I skipped a lot of his shit. When he draws in othe chefs to fuck with recipes, i'm cool with it and his last one of going to casa bonita and other crazy ass places was more entertaining that it should have been.
Ethan Chlebowski has many very good science and subjective testing based videos. Without any bullshit added in, except maybe his new website and app.
Today I'm going to eat 9 different versions of vinegar and talk about why pickles are great...
Same with Weissman. I did drop Babish entirely, though, and don't feel like I'm missing anything not adding him back.
I never saw Weissman's supposed glory days, but I did hear people talk about him and checked him out and found him insufferable.
I also dropped Babish, I just got tired of the slop content and the overall drop in quality.
I genuinely think cooking channels have a finite lifespan, because theres only so much you can cook before your audience basically has all the cooking knowledge they need to do everything.
Chef John from Foodwishes has basically kept the same style and Dad joke humour for ages and he is still pumping good stuff weekly
Chef John is purely videos of recipes. He never did 40 minute episodes about which salt is the best.
I used to not be able to deal with Chef John's voice inflections, but after enough times, I started to find it soothing. Great, straightforward, no nonsense videos. I haven't tuned into him for a bit, not for any particular reason, but he is a classic.
He was BAD early on with it, he's calmed it down a LOT. That said, the man has never released a recipe on there that wasn't an absolute BANGER. Everytime he checks all the right boxes for the fam, I cook it and get rave reviews.
I agree. Everything I've made of his has been great.
His delivery is definitely an acquired taste. And as ALwayyyys.... ENjoyyyyy.
Chef John was there when YouTube began.
He will be there when Google pulls the plug.
100 percent. There's too much potential food for a food channel to ever run dry of content. Only personalities and gimmicks run their course.
He's slowed to the point of years passing between videos (last one was 2 years ago now), but Jacques Pepin is still making new ones (I hope) 😔
Even professional chefs learn new recipes on a fairly frequent basis. You can't run out of content on a cooking channel.
while there may be near infinite variety in the recipes themselves, theres only so many times you can sit down and watch someone make a soup, or a roast, or a casserole, or what have you, regardless if they have 30,000 different recipes for each.
I miss early weissman..now his head up his ass. I enjoyed living in his cupboard.
He has a new channel called Joshua Weissman recipes, which follows a similar format to his early days (including the cupboard bit). But recently he did a poll about doing a "but better" series on this channel, where 90% said yes. I'm just concerned that this channel might also go down the same path.
Yes exactly for both of them. Babish is still kinda okish but Joshua feels like I’m watching AI.
If you want pure cooking, Alton Brown has been posting weekly on Saturday’s. Good eats style.
I checked out on Brown during COVID when he went on one of his political/mask rants and I just couldn't deal with his right wing bent anymore.
I love his old stuff, but even that doesn't really draw me in like it used to.
So many good cooking YouTube channels. "America's test kitchen" tend to be excellent, with a wide range of topics. I'm a big fan of "Aaron and Claire" for his breezy, chill takes on Korean fusion.
"Not another cooking show" does amazing recipes out of the NYC cooking scence, and of course the champ, "J. Kenji lopez-alt," of serious eats fame, just cooking every damn thing the PNW has to offer.
ATK is fantastic!
Lan Lam is a particular standout with her fantastic technique breakdowns.
Alton Brown's new show is hitting just like I needed it to.
Literally reruns with lower production value.
Real nostalgia-jerk, though.
Yep been watching and loving Alton for years.
Alton got me into cooking. Hes brilliant. Can be a bit.. big and exuberant at times, but all around excellent guy.
