Book number 3 is Equal Rites, Eskarina Smith is the main character. Like the first two it's shorter and less intricate than the later novels, but it's well worth reading and I approve of reading the Discworld books in publication order.

I was gonna read each collection in turn, like wizards, witches, death, city watch, etc., and occasionally a standalone.

Is there significant reason to avoid doing it that way?

Nope! Honestly any order is fine, even completely out of order if you don't mind spoilers and are comfortable with a little confusion here and there.

Equal Rites is a Wizards/Witches crossover and helps set up some of the rules, but Pratchett's pretty good about explaining anything you're going to need in the moment he's using it.

I'm glad you mentioned standalones because Small Gods and Maurice are two of my favorites.
