Most meat taste like ass if you don't marinate or season it at all too.
Im still struggling with the texture of the tofu, but that's definitely user error. I can nail a flavor just as good as i could with seasoning any other protein for a meal.
Tofu isnt the only game in town either. I fucking LOVE tempeh and seitan is equally open ended but from a different angle and you can make big giant loafs
cut it up however you'd like (cubed works best) and boil it for 10-15 minutes in heavily salted water, then set it aside in a strainer or on some paper towels for a few
improves the texture immensely, no fucking around with pressing or remembering to freeze/thaw it beforehand
This is sacrilege because you are supposed to retain the shape of tofu but fuck tradition. If you like fried rice get extra firm tofu, scramble it in some spices and oil then throw it in your fried rice as it cooks. Its basically egg fried rice 10/10
Tofu scramble rocks. You can also brine it and crumble it for a feta cheese vibe, lil zaatar and you really have something

Soaking in some apple cider vinegar pre brine for maximim effect. It makes ir a 2 day double soak but it is super worth it
Getting super firm or freezing, pressing, etc can get it to meat like consistency.
Something that improved my tofu game was boiling it in salt water for 8-10 minutes. We used to always press it, but it's easy to end up with tough bullshit tofu. I am not a food scientist, but supposedly boiling with salt and patting dry drags water out without wrecking the protein structure. The surface will dry, given some time, so you get a good crust if you fry it. You can also boil in whatever broth or marinade you've got going on to get those flavors all the way through.
