These desperation foods don't catch on because they're good, they catch on because the alternative is death. Fermented, buried shark isn't a delicacy, it's the only food source in desperate times.
I'm guessing because it can save or something?
In the cheese case, I'm guessing it was a "this cheese has clearly spoiled, but we can either eat it or go hungry" sort of situation.
the maggots are purposefully introduced to the sheep milk
they could just drink the sheep milk instead of introducing the maggots, or made regular cheese.
This explanation only really makes sense the first time it ever happened on accident. Subsequent creations of this monstrosity are done out of hatred of the world and all that is holy
