You can turn the extra wine into vinegar. it does this naturally if you leave it open for a few weeks. This depends on the alcohol content, and you can buy starter bacteria for the process to speed it up.
Or drink cheap wine
Too late; this more fun!
Or you could distill the wine into brandy!
