The technical reason is that it lyses the cells. The freezing process causes the water in the cells to expand, often beyond the boundary of their cell membrane/ cell wall. The breaks/ punctures the membrane/ wall. These releases more sugars, that otherwise would require either chewing or digestion to expose.
I usually freeze between 20-60 lbs of banana a month, at least during summer/ fall when banana's are a plenty.

Banana ice cream is just blended frozen bananas at the most basic. Sure you can add some (non)dairy milk and sugar, but it's still mostly just banana. And it's delicious!

Have previously mixed in some protein powder in a blender to make something very ice cream like without all the sugar and fat.

When I don't get through bananas and they get over-ripe, I freeze them (peeled). They're perfect for banana pancakes, baking, smoothies, dessert, etc.
I literally just did that with a big bunch of bananas. Like, 45 seconds before I sat down and opened Lemmy. What an interesting coincidence.
They make for great banana bread; the riper the better

Like, I hate the smooth creaminess of bananas and you’ve made them even smoother and creamier.
Next time don’t put them in a blender with some vanilla creamer and chocolate syrup and whipped cream and maybe cinnamon and nutmeg on top.
My wife brought home little frozen chocolate covered banana bites one day. They didn't deserve to be as delicious as they were!

Try grapes next, it'll blow your mind. Let them thaw a little and they're slushy because of the high sugar content.
How do you keep the slices from freezing to a solid block?
Even if you don't cut them up, they are still soft. Much like ice cream. You can actually throw them unpeeled in the freezer and you can cut the peel off easily due to this. They don't turn into ice cubes.

I freeze my nanas all the time, especially once they become too ripe.
I make oatmeal w coconut shred and walnuts every morning. Once it’s done cooking I throw in 1/3 frozen banana and a bit of granola for added flavors/texture. One dollop of yogurt and yum!!
