I used to smash a monster recovery on the drive to work, pick up a large iced coffee from McDonald's on the way in, finish that by lunch, and drink my second monster recovery after.
I stopped all that cold turkey back in 2020 and now rarely have a morning cup of coffee that I never finish.
It's wild looking back on that, so much stress and caffeine. I'll never go back to it though, and I don't miss it one bit.

The anxiety. It's a chemical found in teas that's credited for the calmer caffeine boost they provide.
It's supposed to maintain (and maybe enhance) the increased alertness of caffeine while counteracting the jitters and anxiety.

I haven't heard of any negative health effects. It's naturally found in tea, for whatever that's worth.

Try different types of coffee, even different regions or growing conditions.
Among arabica clutivars, Ethiopian beans seem to sit the best with me, Brazilian makes me anxious AF.
I suspect altitude might be the correlation -- Colombian, Kenyan, PNG also seem to sit well; Indian, Australian, Mexican also make me anxious.
Brewing methods can give different feels, too. Espresso vs filter vs cold drip.
I suggest getting long Covid, now I need an espresso in the evening just to function while I get the kids to bed and read to them and I barely even feel it.

Weirdly I can, I used to be so sensitive to coffee that anything past early afternoon was guaranteed trouble. Now I can do it at 6 or 7 and still collapse at a normal time.
