Looks like the physics will be janky and the UI will look like ass.

Second video has NPCs get out of their car if you hit them and try to ram into you.

That happens in GTAV/O too. NPCs have a chance to have a road rage reaction rather than a panic one and can try to ram and attack the player or (IIRC) even other NPCs that hit them.
