Eine angepasste Variante des Rezepts aus dem grandiosen Buchen Seelenfutter Vegan

Zutaten für 4 Personen

Für das Gemüse:

• 600g Tofu
• 300g Pilze (idealerweise Shiitake, aber anderen gehen auch)
• 2 rote Paprika
• 2 Frühlingszwiebeln
• 1/2 Stange Porree
• 1 rote Zwiebel (optional)
• 2 mittelgroße Möhren
• 2 Knoblauchzehen
• 3 EL Stärke
• 1 handvoll Erdnüsse (idealerweise geröstet)
• 1 daumengroße Ingwerknolle
• Öl zum Anbraten
• Chilli
• Pfeffer

Für die Soße:

• 4 EL Sojasoße

• 4 EL Reisessig

• 4 EL Reisweinessig

• 2 TL Sesamöl

• 1 EL Zucker

• 4 EL Wasser

• Reis nach Wahl

Zubereitung

1. Tofu auspressen und in etwa 2cm lange Würfel schneiden.
2. Tofuwürfel in einer Schüssel mit der Stärke mischen.
3. Öl in großer Pfanne (oder Wok) erhitzen und Tofuwürfel hinzugeben, gelegentlich wenden.
4. Zeitgleich Ingwer, Knoblauch und Zwiebeln schälen und würfeln; Pilze, Paprika, Frühlingszwiebeln, Porree und Chilli reinigen und kleinschneiden.
5. Wenn die Tofuwürfel goldbraun sind, Ingwer, Knoblauch und Chilli hinzugeben und kurz mit anbraten.
6. Restliches Gemüse (außer Lauch) und Pfeffer hinzugeben und anbraten bis es recht weich ist.
7. Zutaten für die Soße und Lauch unter den Pfanneninhalt rühren und kurz einkochen lassen.
8. Mit Erdnüssen garnieren und zu Reis servieren.

Hallo Lemmy! Ich glaube, ich hab ein ernsthaftes Suchtproblem. Esse seit ca. 4 Jahren sehr viel Parmesan. Also wirklich kiloweise. Parmesan auf Nudeln, Pizza, Kartoffeln, Sandwiches, Müsli, Nutella. Hab das bis vor kurzem nicht ernsthaft reflektiert, aber heute im IC auf der Fahrt von Frankfurt nach Berlin ist es mir plötzlich bewusst geworden. Auf der Toilette war so ein oldschool Seifenspender. Da ist ein Stück Seife drin, unten kann man drehen, dann kommen Seifenflocken raus. Und das erste was ich denke: mhh würd ich gerne mal probieren. Also, warum ich das schreibe: kennt sich jmd. mit Parmesansucht aus? Idealerweise ehem. Süchtige, die von dem Teufelszeug weggekommen sind? Bin echt verzweifelt und freue mich über jede Hilfe.
