The first four seasons are rock solid. I've tried rewatching a couple times, and for me, S5E6 is the first real "uh oh" moment in the series, for multiple reasons. I don't usually make it much farther than that.

Last time I did a rewatch, I stopped mid way in season five.
Season 4 has some great plot and setup for 5, but I think 5 already started dragging in a not fun way (for me).
I'd recommend not planning and dropping whenever you feel like it.
I did Season One only and it was pretty satisfying.
EDIT: The reason for this is that it's pretty heavily built around the arc of one character, who is not in successive seasons. Many of the other characters that take on larger roles in later seasons are either small children, irrelevant or not introduced to use yet. It's before a lot of the other arcs get going so it doesn't suck you into watching successive seasons in the same way as if you continued more into the show.
I rewatched it a few years back and honestly 6-7 are okay. Not brilliant but not terrible. In fact, I sort of stumbled into S8 and was (re-) disappointed in how precipitous the drop was.
Then again, like any rewatch, it ends when you stop giving a shit, haha.

Season 5 Is bad, put in retrospective. I'd watch until season 4 and stop at the first episode in season 5 that feels awkward. To me it'd be the first one of the season.
