Largely, to sell greeting cards (and also gifts like flowers and chocolates). There is some legitimate history to these holidays, but they continue to be relevant because they make money for certain companies who push them.
There are holidays that aren't pushed for that are largely forgotten or ignored. Holidays exist to be celebrated, and if they aren't observed, they don't really matter. For example, in Japan, Valentine's Day is largely men celebrating women. Its opposite is White Day which comes a month later and it's for reciprocating Valentine's Day. But outside of Japan, it isn't pushed much, if at all, so most of you haven't heard about it. By the same token, you mainly hear about Mothers Day because stores push it to get you to buy.
Every day is kids day.
