Be honest: its a custard tart with some raspberries on top - and it looks amazing.

I made vanilla and chocolate ones last month, and it was shocking how simple the crusts were to make. The trick is to freeze them thoroughly before baking for minimal collapse or expansion.
This is the recipe I used.
