It’ll go from hard to rubbery around 95F 35C, and will start breaking down in to vinegar around 430F 220C.
Pizza is generally made above 500F 260C, depends on the style with New Haven style going up to 650F 340C.
So given that pizza is cooked relatively quickly, and we’re talking about it being mixed In to the sauce which generally isn’t getting direct heat (depends on the style, some have very exposed sauce, some are completely covered in cheese). You’ll probably end up with a rubbery sauce that’s kind of vinegary.
