Because I never have a single favorite anything, here's my top three in no particular order.

!noncredibledefense@piefed.social frequently has some great content that requires me to look something jp to understand the punchline, and is just all around great at mocking military violence.

!tenforward@piefed.world has a ton of excellent humor, from clever puns to in jokes about the shows and movies. It is rare than I don't cluckle at a couple of them each day.

!fuck_ai@lemmy.world because corporate AI is ruining everything by flooding the internet with slop and malicious propaganda. It doesn't shit on the good uses of AI like tools for music or science, just the worst implementations that are being forced into everything.

Probably stuff like !lemmy_stitch@sh.itjust.works and !foraging@slrpnk.net I think. It doesn't seem like there are a lot of communities dedicated to old timey/low tech crafts, but the ones we do have are awesome.
