I eat my carbonara with a side of steamed broccoli because I like the earthy broccoli taste with the cheesy pecorino/parmesan taste.

People claiming a dish should not contain this or that ingredient do not have any creativity and are the type of people who would have never invented their recipe in the first place. So don't listen to them and keep making good cooking.
Italian here, I don't care lol. This isn't surely the classic recipe, but nobody is entitled to tell you how to cook. If you like it, others can just fuck themselves.

You are free to re-imagine every dish. The fact that we (italians) may have developed a dish does not give us any reason to tell other people how to eat their food. Just know this: italians are the third importers of kebab in europe, italy is the country in europe with the highest number of "all you can eat chinese/japanese" stores. We really love to mix our culture to other people food, and you should feel free to the same!
I would only say. "It is not a carbonara". But: Pasta dish or Pasta with.... Yes sir.
