I found a router, and it was compatible with openwrt. I have some ideas of what to do with it, but if you have any cool projects or ideas, please tell me about them.

I should add that I have a home server already that I route my internet through for adblock and hosting services, so I'm looking for something a little more off the wall.

You can set up various subnets and assign devices to them + firewall them off (like isolate a smart tv).

You can set up advanced DNS features (this is very powerful). Obfuscate your DNS, as locking DNS, use VPN DNS, use encrypted DNS, set up a home-focused domain, give yourself a good subnet and named hosts controlled by the router.

You can set up powerful firewalls and poke specific holes in them to support clients that need that.

You can set up pihole or similar which is mostly DNS but can do a bit more.

You can run various small services that coordinate with other computers. Like you can make your uninterruptible power supply "oh shit" control node be the router, have it turn off your other networked computers.

You can have it run dynamic DNS.

You can have it run / host various tunnels, including a way to get lan access remotely in a way that is highly secure.

You can do vlan stuff (but depending on hardware some aspects may be slow).

You can schedule various things to happen at various times, like kicking out connections that have certain patterns or have been connected too long with no traffic.

You can give certain devices higher traffic priority. Like maybe your laptop or phone always gets first dibs.

You can sniff out and detect attempts to scrape your WiFi password.
