I like the plating! Honestly I like contrast of crunchy carbs and cool fresh cucumber. I would be interested in elevating this plate on the cheap.

Maybe a little sauce (suggestions?) on the puffed rice cakes. Tahini or a hearty hummus for dipping with the cucumber.

Been thinking on this a bit. Slather that rice cake with butter knife full of Romesco sauce and have the Tahini and cucumber as a side or put on top for an open faced sandwich?
