I dont envy you. I think there are some legit fun modern shows.
If you wanna name a few im not too opposed to check stuff out. I just want the camera to sit still and for takes to be longer than 2 seconds. I'll do an old show for each new show so we're even. I do like shows, i just wish they'd chill
I cant tell you how / what way shows are filmed and wether they are a problem for you -but. From the top of my head I heard good things about Severance, The Bear and Andor which I watched. Not tryng to be mean but I dont get your problem but I would also say I have rather simple tastes so its possible I would get it if I had more of an eye for the art of film making which I dont despite doing art.
I liked Andor a lot, I have been a cook for 20 years and I really dont wanna watch The Bear. I have heard good things about severance.
As far as taste sophistication, that doesnt really enter into it. I can just explain what I dont like cause im a film dork, it's just a preference thing where I kinda prefer when TV was treated more like a play and due to budget reasons the camera sat still, effecrs were minimum and character/dialogue had more breathing room.
Anyway, for old stuff, I just finished a Twin Peaks rewatch, if you haven't seen it, biggest recommend ever. I'm a big sci fi dork, so Babylon 5 is another giant recommendation. Been checking out Outer Limits recently as well, its kind of a lesser Twilight Zone, but its okay, check out Twilight Zone.

Babylon 5 has a tough season one on first go, on a subsequent watch yku notice a LOT of subtle setups for stuff way down the line. The planning is something else
