What if you take land from somewhere that doesn't need it like the mountains and just pushed it into the sea, didn't think of that did you??
Just go up and get a big chunk of the moon and drop it in there. The gravity's lower up there so it would take like what, a couple of big guys to just chuck it the rest of the way?
That's how we lost the dinosaurs
Just enlist the help of the remaining dinosaurs to hold a really big net to ease it down into place. They survived one impact, so they've got real-world practical experience in that kind of thing.
