This has a little overlap with the last list of recommendations I made, but:

Secrets of the Silent Witch: fairly light and fluffy shoujo anime about an accomplished witch with crippling social anxiety and probably autism (and trauma) going undercover at a royal academy. Has some darker bits when it deals with her childhood trauma, but mostly it's just a kind of formulaic reverse harem slop thing where she's just an awkward bundle of nerves and neurodiversity surrounded by a bunch of very attractive, non-threatening young men who are very helpful and positive but also respect both her abilities and her as a person. That and some fairly nicely animated action scenes now and then.

BOFURI: completely empty, fluffy slop about a girl and her friend playing a VRMMO with terrible balance in a world where no one theorycrafts builds or knows what minmaxing is so the protagonist just stumbles into every broken build choice, item, and skill synergy forever. It's a rare VRMMO slop anime where the OP protagonist is a tank instead of a speedy DPS build. No drama, barely any sort of narrative story, just stuff kind of happening.

I've Been Killing Slimes for 300 Years and Maxed Out My Level: office worker gets isekaid by doing too much office work and dropping dead at her desk, gets given immortality and permanent youth in her next life by a goddess who's way too into that idea, and just checks the fuck out of everything to live in a cabin and farm slimes on the way too and from town forever, until she accidentally hits the level cap, word gets out about her legendary, godlike power, and things start getting complicated. Completely empty, fluffy slop where she just keeps building up a larger and larger collection of friends and adopted family, there's really no narrative tension and it's not really going anywhere.

The Demon Girl Next Door: magical girl slop with a twist, namely that the protagonist is a jobber villain while the magical girls are all traumatized former child soldiers who are trying to make her less pathetic and stop her from getting hurt. Mostly light and fluffy, as expected since it's based on a 4koma series, but with a bit more depth than most of the series on this list.

Seconding Slime 300 and Demon Girl. I have not seen Silent Witch or BOFURI but every time I see the title of the latter I think "BOFURI'S NUTS! GOTTEM!"
