Is that mold or just really dirty? Either way, I feel a lot better about the state of my kitchen now.

I think it's grime from well over a decade of cooking oil splattering to the side, only occasionally getting wiped down as it collected dust and became discolored

When my grandmother passed away and we went to clean up her house her oven and the area surrounding it looked exactly like that because she also kept a deep fryer there. It was a pain in the ass to clean up.

I believe it's rust. You can tell from how clean the stovetop is. Same for the bathtub in the video

It doesn't look like rust. There isn't any chipped paint or anything to indicate that it's painted steel on the wall. To me it looks like only the stove top has been cleaned.

Also see the handles top left. Only clean where someones touching them when opening.

IMHO those are layers of hot oil. We get this on the oven fan, if we don't clean it every half year or so.

Yes.

Realistically it's probably mostly grease/other food particles and grossness built up over time.
