"Gachapon" is a Japanese term for the things where you put a quarter in and get a random plastic toy. A gacha game is essentially any game where you can gamble for characters like this, usually with an anime aesthetic.
They're very popular because they can generally be played for free and, since the popular ones make a lot of money off the gambling, they can hire tons of people and update the game at a pace that other game genres typically can't match.
