Wasn't OP complaining about the Windows desktop client? What has that to do with the server setup, Docker, etc? People can have the exact same issues on the client side even if the Nextcloud instance is professionally managed by a large organization.

Usually not. I was in the same situation and had to register a company in the EU. That way I pay my own taxes, insurance and pension contributions. If you do that, make sure to calculate the extra cost for insurance/taxes and raise your rates accordingly.

I've been a game programmer for >10 years and I would be fucking miserable if I spent most of my free time with video games as well. Isn't that what we call work/life balance? I concur. I've been in restaurant kitchens and most of them were more sanitary than the average home kitchen. They almost always have better ventilation, and they are cleaned regularly.
