Menschen sind grundsätzlich faul. Um gute vegetarische Küche zuzubereiten, muss man sich über Zutaten wenigstens ein bisschen Gedanken machen und dafür fehlt der Anreiz. Wenn das Geschäft gut läuft, warum etwas ändern? Hinzu kommen dann natürlich Vorurteile, wie zum Beispiel "Vegetarisch essen nur Frauen und Frauen essen gern Salat und außerdem essen Frauen ja auch nicht so viel" und dann gibt es halt nur den Salat der niemanden satt macht - nicht mal die Durchschnittsfrau.
