For supper I made colcannon for the first time, spicy Korean eggplant and BBQ pork cutlets. Whew it was great and I am stuffed.

I made cheesy cauliflower balls today and they were great. Especially enjoyed the bottom of them because as they baked the cheese got crispy on the baking sheet. Used the food processor to break down the cauliflower and cheese, a real time saver. Added bacon to theses, chefs kiss to that haha.

Made an awesome dish this afternoon of spicy Korean eggplant. It was a hit! The eggplant was nice and creamy, and the sauce had a nice heat to it. I'll definitely be making this again, and it's so cheap to make, which is also a win.

I made baked falafel with red lentil flat bread for the wrap. I baked them just because it's easier then frying all these for a family but, still they are delicious. The lentil wraps are great with it as well. Honestly, 7-10 years ago if you told me that some of my favorite meals to make would be plant based.... I'd chuckle and dismiss it. I mean I still enjoy cooking meat but, yeah plants make super satisfying, cravable meals.

It's about to warm up out of soup season so I made a new one for me. It's butternut squash, cauliflower, lentil soup. It was funny because after I blended it with an immersion blender I tasted it and it tasted like it definitely was missing something, added the coconut milk and some lime juice and WOW that was it.

I used my own veggie broth for this. I didn't have red curry paste so I just used some powders I use for curries with a little extra paprika.

This was my first attempt at making farinata. It could have used a little more bake time but it was great. It's simple but full of flavour I would definitely make it again and experiment with toppings.

Made it with my own vegetable broth as well. It turned out great, would definitely make this again. Just didn't have cilantro and missed that.

I found another bread recipe called basic white bread. This is even more basic than the first. The ingredients for this one was only yeast, sugar, water, flour and salt. The crust was amazing so flaky. It was cooked in Dutch oven with the lid closed for the first half then open for the last half.

This evening I made a curry that had mango yogurt in it and rather than making rice I made baked lentil balls, haha there is a better name for them, right? Something like kofte? Anyhow this dish was extremely affordable, packed with veggies and flavour.

Thanks. It's extra firm tofu, water pressed out, then I froze it to get more water out. Tore the tofu into bite sized bits into a bowl, added some soy sauce, maple syrup and rice vinegar to it and let it marinade for a bit. I was out of regular flour so I used chickpea flour for the breading... In one bowl I added corn starch and chickpea flour and in another a bowl the same but with some water and mix it. Coat the bites in the dry mix, into the wet mix, back to the dry then shallow fry the bites. Cool then coat with your preferred sauce. Edit worth mentioning that while it was thawing I squeezed water from it. I was surprised at how much was in it.

I dunno, really, it's the skin and tendons... I try to minimise good waste as best I can, but the bits cut off and removed would be the part you hold the drum and likely didn't eat. I'd say it feels like waste but really no one eats that bit. Plus, this way if you have pets, they get a treat and that skin and 5mm of tendon gets eaten 🙂

It is a chicken drumstick, you cut and peel the skin/tendons from the drumstick where it starts to narrow. It is a bit of work doing that bit, then you simply push the meat down into a ball. I then seasoned it, smoked it, when they were done smoking I filled a coffee cup with BBQ sauce and dipped the meat into it and caramelized it on the BBQ.YouTube link This is where I saw them done. Seen a version where there were deep fried, going to give that a try sometime
