i was in my early 20s, recently moved to the usa, hosted a party and made these, told everyone after eating that it was beef heart, most were ok with it exept one guest that got nauseous lol. i wouldn't do same now i am a bit more mature, although still a jerk in different ways.
People reacted the same to tripe and head meat. I feel they are more open to the idea now as long as it is "tripa" and "cabeza" when they order them to ignore it and enjoy. The key is knowing of a place that makes it the way it should be done for maximum flavor.
I'm not sure if I would have been pro-cuchos before, but after seeing that, sure, I'm anti-cuchos now :)
Wow, those take me back. Not enough dipping sauces, tho!
