I found the suggestion to make a Luanti one pretty cool, since it's open source™️, but it's probably not as feature-full as something like Hytale.
They finally renamed minetest?
On a technical level luanti is pretty good, it is however completely not fun to play. Its not just that's it's not feature rich it feels off, the controls feel floaty and unresponsive while the gameplay is just overall not enjoyable.
Even with Mineclone? They really have tried to stick as close to Minecraft as possible for that one. Although maybe your problem is more with the feel of the engine
Even with mineclone, the problem is that it tries (and fails) to desperately replicate minecraft. It doesnt improve upon the concept, it doesnt do anything new, it doesnt have its own identity, the only good thing about the game is the code but you dont play code. The entire gameplay is for the most part just working on the codebase.
Meanwhile Hytale is an actural game that you actually play and then enjoy, not a minecraft clone but foss an (admittedly only partially source available)

Before these two there was a vanilla one that got griefed. Then if we go back two years there was a modded one. And then I think there was a vanilla one at some point before then?

I may be thinking of the griefed one, then. Guess people were even less inclined to play on that one.
We’ve gone through a couple, I ran a modded one for a while but it went months without anyone using it so eventually I shut it down. I still have the discord channel which I’d be happy to hand control over to someone either for another one or for something similar.

What is the deal with it being “early access”? Seems like it’s been around for a while, no?
That means the game isn't finished, singeplayer hasn't fully released and the game is constantly changing.
Gotcha, okay, I guess I’m just gun shy when it comes to early access. I’m not a star citizen donor, but my brain always draws a comparison.
The game is 100% playable and enjoyable right now, at least the basics are.

That would be cool! I haven't played Hytale in a while, but I loved what I played and it would be nice to have a Hexbear server.
Chapter 1 is releasing very soon and update 6 is coming out, meanwhile worldgen v2 is only a couple of months away. The server would be early access until worldgen v2, I made this post in advance to see if there is any interest.
