TAS and Discovery both showed the Enterprise has food synthesizers rather than replicators.

How significant is the difference? — it’s never made clear but picking up a meal from a food synthesizer is implied in TOS when Kirk gets a simple meal from a wall.

Also, it does seem that SNW’s food synthesizer is much more sophisticated than the one in TAS and Discovery, fabricating better quality basic materials.

Here’s compilation I made a while ago, of Scotty’s distain for the mayhem caused when the ship’s main computer gets hit by a ‘spatial anomaly’ and interacts with the ‘Rec Room’ 3D holographic simulator in TAS ‘The Practical Joker.’ At bottom right, Scott reacts to a misbehaving food synthesizer that is spitting out all manner of fruit — as shown later in the video OP attached.

In Discovery, in the 32nd century, Admiral Vance makes the point that all the food at Federation headquarters is made from reconstituted waste.

Yep correct, but he’s talking about replicators and not synthesizers

Admiral Vance once claimed that Federation replicators often recycled waste – including fecal material - produced by living beings to provide the raw material for replicators. Such material was deconstructed down to the atomic level, though this may have been an attempt to mess with Osyraa as she had previously mocked the admiral for never eating a real apple.

The food replicators converted energy directly into food the same way transporters convert a person from matter into energy and then back again. What he was describing was a completely different type of process likely mechanical and chemical in nature.

Note he did not say one of the things they turned waste into was food.

Edit: IIRC they actually had an episode of Enterprise in which they encountered an alien race that had food replicators and were fascinated by the technology.

Enterprise is the one Trek show I haven't managed to finish, so I'll have to take your word for it. I always assumed "food" was getting glossed over with that bashful "you name it".
