I really nailed my salad for lunch. The dressing was just a simple lime juice and yoghurt based, but once mixed in the salad with the egg, avocado, parmesan and bacon bits it was a perfect balance. I hope the lime and saltbush dressing I've done for the side salad for dinner tonight is as successful.

I add pepitas to most of my salads. Gives a nice crunch and is super good for you.

I'm not a huge fan of seeds in my salad. I like to make croutons to give crunch, or just rely on the crunchiness of cos lettuce.

Company: We have to have a phone portal, but we are going to chronically understaff it and blow out the wait times. This will dissuade customers from bringing us issues to resolve!

So I have a lot of coriander. I am thinking of making the RecipeTin Nandos chicken rice, but perhaps I should chop and freeze the rest of it
