A couple of my neighbors were actually like "thank god they're doing something about all the speeders and the fucking kids who are breaking into people's garages". Reasonably-powerful lasers (the most powerful you can legally/discreetly get, pay cash) making direct contact with the image sensor for an extended period of time will reliably fry the sensor. You'll need some way to keep the laser steady and on-target, but you could rig up something easily with one of those flexible ttripods (like a gorillapod or similar), a tripod pan-head (the kind good for video with a long handle for precise control) and some small binoculars to verify you've got the laser right on the lens. It's not as satisfying as ripping it off directly but if done right you'll make it useless without risking getting caught.
Keep in mind that they may own more than one ring camera or other surveillance camera pointed at the street. If you're doing this out of the window of a vehicle, make sure your vehicle isn't easily identifiable from anywhere on that property. Park in a way that makes the license plates difficult or impossible to read, and drive something discreet like an old grey sedan. Wifi jamming is also a possible added technique as most door cameras don't have onboard storage and need a 24/7 wifi connection to upload footage. The wifi jamming can be started when out of eyeshot of the house.
All hypothetical of course. Wifi jamming and destruction of someone else's property are almost certainly illlegal where you live, so all this is just my advice on how to defend against somebody trying to take out your own ring cameras.

I'm not sure what the best way is to disable them though. I've been wondering if just walking up behind them and hitting the camera with spray paint might be the best bet, but I'm no saboteur.

I hate these cameras. I also noticed only "expat" Americans put them on their homes around here and never anyone else because they are all paranoid loser grown children.
I fucking hate these cameras. I deliver parcels as a living and like 25-30% of the houses I approach have these disgusting little panopticon devices on them. Who needed this? Why are so many people willingly submitting to this?
I also never ring them because it’ll be some item that requires a signature and some disembodied voice will be like “oh I’m at the office can you just leave it there”, “no sorry it needs to be signed for”, “yeh but can you just leave it”, “no I would like to keep my job thanks”.

I was about to freak out because my parents just got these. But then I remembered, of course they didn't get Ring cameras, I think they got some off brand cameras whose footage isn't stored on any cloud, it's stored on some local hard drive in their house only. Phew!
It's still retrievable by ICE probably but at least they'd have to get a warrant and shit to go in their house, so there'd be a few roadblocks, rather than just going to some company's cloud storage that would make it easier for them.

It can still be friction for ICE in court, which is why they take pains to bypass the legal system as much as possible. Once enough of the judiciary have been replaced or cowed, they won't need to bother.
