Displayport is pretty versatile. You can get an active DP hub and split DP into more independent screens if your GPU will support the total resolution.
And you can use it over TB/USB-C.

Never been a sysadmin, but used to sell electronics. People really have absolutely no idea how any of it works, including pretty straight forward stuff, like displays. Had to explain to a shockingly large number of people that there was no such thing as an ethernet to HDMI adapter and that even if there was, plugging ethernet into their non-smart TV's HDMI port wouldn't let them watch Netflix on it.
HD Base-T does exist but I know what you mean.
Yes, HDMI over cat5e is definitely a thing. As is Ethernet over HDMI, but as far as I know literally no retailer sells those.
I bought HDMI cables that support ethernet years ago from Amazon’s store brand.
And were you able to use that functionality?
None of my devices support it.

It would de really convenient to network all the devices connected to my A/V receiver.

I once had a person refuse to troubleshoot a monitor issue over the phone. 2.5 hours away. Swore to me that they hadn't messed with the monitor cables since it last worked. They had both ends of the HDMI plugged into the same monitor.
That does sound like a good prank to pull on a co-worker.
