Shadow Of The Colossus Without Boss Battles does actually sound pretty cool. as long as it lets me climb stuff sometimes and doesn't have the always-over-the-right-shoulder-with-no-way-to-switch fortnite camera every game seemingly has to have these days.
Me when the vimblio jame says "The champion is over there, they are very brave!" instead of a preferred pronoun.

That sounds fun
If this appeals to you I suggest trying out Shadow of the Colossus. It’s not exactly what the OP is describing but there are long stretches where you just ride a horse through scenic wilderness.
I'm buying one copy for every extra pronoun that gets added.

Sounds kinda droll, but I'd totally be into it. Raising horses and facilitating trades sounds like the minigame in an RPG that would suck me in.
I only play Breath of the Wild to ride around on horseback and enjoy the scenery and music. So I genuinely can't wait to play this.
I am legit very interested in this game hopefully becoming realized, also love making gamers
