Transfer in progress got cancelled?
Stopped it at 94% complete. Mission accomplished.

Count the number of project folders and multiply by 5tb?

Sorry, not how math works. They got positive 0.18 projects.
Depending on the format, that might be enough to stop the threat.

Not an expert but there’s the whole operating system which is so many gigs and then the photos and stuff
Well... either hackers found a hard drive with fifteen copies of Windows 11 installed... or there was about 900 GB of project data vulnerable.
