Interestingly, iOS 27 has a new “2 phones can share 1 number and you can swap between them” which didn’t seem to make a lot of sense.
What in the what now? Just between apple phones or with android or other OS? Guess I hafta go read…

But The Apple documentation (https://support.apple.com/en-us/127274) mentions that your iCloud gets synced between both devices, so now I’m confused what the purpose of this is

What you need:
Two devices running iOS 27 or later that are: Connected to Wi-Fi Sharing the same Apple Account Using Messages in iCloud to ensure messages sync Signed into FaceTime and iMessage with the same Apple Account An eSIM from a carrier that supports iPhone Handoff: USA: T-Mobile Germany: Telekom
Haven't actually tried it but T-Mobile digits supposedly let's you do what you seek.

Uncle Sam could always be that 2nd phone, the network is ridiculously insecure. It's so well-known, the spooks didn't even stop Veritasium from making a video on it. Hell, it doesn't take a state-level actor either, it takes a motivated individual and that's pretty much all.
