I use butter/ghee for baking/cooking, I don't use it as a spread on bread/toast so I don't need to worry about leaving it on the counter. I grew up in a margarine household, I made the switch when I grew up & got into baking and I just can't go back. Butter just makes baked goods taste better.
Here's a tip: anyone can make delicious brownies from a box, just sub water with milk, use melted butter instead of oil, and toss in some instant espresso powder & some extra vanilla extract. Takes basically no effort & it improves them immensely

don't put coffee flavor in stuff
You don't put enough to make the brownies taste like coffee, just a dash or so, but it really adds to the depth of flavour. It does make the batter taste like a coffee crisp though, which is an upside personally but not for everyone
