They don't. That's not what it's like. It's just a big well in the ground.
Second pic is the accurate one. You go up the hill, walk in, then all the way down. Exit from there. It's not surrounded by water.
Just to add to this - the first picture is an unnamed novelty duck house near the ground of Pena palace. It's only a few feet high.
The second is the Torre da Regaleira.

If a chicken coop didn't have a lockable door, was on an island or raft in a body of water, and housed ducks instead of chickens, yeah.
