It irks me to now end when restaurants refuse to do minor changes or substitutions. I can understand them not doing huge modifications to a menu item, but forcing me to eat a rare steak is a level of food snob shit that should lose business.

It looks roasted whole, smoked and/or sous vide. It's likely cooked to temp all the way through but those methods preserve the colour, juices and texture of the meat, because it looks tender as hell and not in a blue way.

Set menu restaurants tend to be sold by the seat or meals are picked in advance, to allow for more time to prepare food that takes exceptionally longer than in casual dining.

Yeah that’s fair, I didn’t think of that aspect. I definitely wouldn’t find myself at a place like that, but I get it.
